Merry Christmas, everyone!
Living close to The Corner Store has been wonderful. During my visits, I’ve bumped into friends, grabbed a coffee and picked up last minute ingredients for a holiday potluck. My latest visit involved searching for ingredients for a great appetizer. I was short on time and looking for inspiration. And that’s when I saw the Spicy Blackberry Preserves! I’ve used brie and crackers in the past, but this was going to take it to the next level! Try my recipe below — it would also make a great appetizer for New Year’s Eve.
Baked Camembert with Spicy Blackberry Preserves
Prep time: 5 mins
Cooking time: 15-20 mins
Ingredients:
- MouCo Cheese Company: Camembert Cheese
- Primo: Blackberry Serrano Preserves
- 34 Degree Crackers: Natural Flavor
Optional Ingredients:
- 1/2 cup of chopped nuts
- 1/2 cup of raisins or dried fruit
- 1/3 cup of juice, apple or orange
Directions:
Preheat the oven to 350 degrees.
With a sharp knife, cut off the rind around the top edge of the cheese and discard. Put the cheese into a round baking pan. Top generously with the spicy blackberry preserves.
If you wish, add the optional nuts, dried fruit and then the juice.
Place pan into the oven and bake for 15-20 minutes or until the cheese is soft and melted.
Serve with the crackers, and enjoy! And make sure to come back and tell me how many people said, “This is really good!”
