MMLocal Pepper Frittata Recipe & Arugula Salad with Plums

MMLocal makes recipes easy and delicious. The company preserves local harvest fruits and veggies at their peak of ripeness and then adds a few spices. When you open a jar the produce is so tasty and can be added directly to your dish. They even include the location of where your produce was grown, so cool!

Using MMLocal’s High Desert Peppers (Hot) and their Plums, I pulled together a Pepper and Egg Frittata and a Plum and Arugula Salad!

Pepper and Egg Frittata

Prep time: 10 mins

Cooking time: 25-30 mins

Ingredients:

  • MMLocal High Desert Peppers, Hot (choose Mild if you don’t want it to be spicy), drained
  • 8 eggs
  • 1 cup of milk or milk alternative
  • Salt and pepper to taste
  • 1 teaspoon of butter or butter alternative

Directions:

Preheat your oven to 400 degrees.

Using the butter, grease the inside of at 8 to 10 inch oven safe pan or glassware. Add the drained peppers.

Whisk together the eggs, milk, salt and pepper. Pour into the pan.

Bake for 25-30 minutes, or until a comes out clean when inserted in the center of the frittata.

Plum and Arugula Salad

Prep Time: 5 mins

Ingredients:

For the salad –

  • MMLocal Plums, 4 with the pits removed and cut into quarters
  • 4 handfuls of arugula
  • 1/2 cup of chopped pecans
  • 1 ounce of sliced gouda, or a similar cheese

For the dressing –

  • 2 Tablespoons of sherry vinegar
  • 3 Tablespoons of olive oil
  • 1 teaspoon of honey
  • Salt and pepper to taste

Directions:

To make the dressing, whisk together the sherry vinegar, olive oil, honey, salt and pepper. Set aside.

Add arugula to a salad bowl. Top with plums, then cheese, then pecans. Pour dressing on top. Serve immediately.
