The Secret to Gourmet Gluten-Free Baking: Bella Gluten Free

For gourmet cooks (and eaters) with a gluten intolerance or other food allergies, however, baking often becomes a challenge instead of a joy. And a big part of that challenge is the flour. One can start to feel like a mad scientist, dipping into all those bags of allergen-free grains, striving to create the perfect combination.
What’s the secret to gourmet gluten-free baking? That’s easy: it’s finding a perfectly calibrated flour that delivers great texture and great results every time.

This week, I talked with Mary Capone, founder of Bella Gluten Free, to learn more about her inspiring foodstuffs. Mary is a gourmet, organically-trained pastry chef, and an Italian to boot. In 2003, she got diagnosed with Celiac disease and had to scratch gluten out of her diet. Well, you know where this is going: Live without bread, pizza, focaccia, scones, and cookies? Forever? No way!
For a few years, Mary experimented, tweaked, and refined her old recipes until she had successfully remade every one. “There is nothing you can’t recreate,” she explained cheerfully.

If you are gearing up for holiday baking, try Mary’s recipe for delicious golden-brown sugar cookies that you can ice and sprinkle to your gluten-free heart’s content.
- 2 1/2 cups Bella Gluten-Free All Purpose Baking Mix
- 1 1/2 cup sugar
- 2 tsp Baking Powder
- 1 tsp xanthan gum
- 1 cup butter or butter alternative
- 1 egg
- 1 tsp vanilla
- 1 tsp almond extract
- In large bowl, whisk together the first four ingredients. Use a mixer to blend the butter and add the egg and extracts. Add dry ingredients to wet and mix just until dough forms.
- Refrigerate for 30 minutes.
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
- Roll dough out between two pieces of parchment paper to 1/4-1/2 inch thick. Cut shapes (dusting cutter in Bella Gluten-Free All Purpose Baking Mix). Place on lined baking sheet. Bake for 12-14 minutes or until a light golden brown.
- Add sprinkles or sanding sugar when cookies are hot. Cool cookies before adding frosting.
