In 2007, Richard Glover was having a typical discussion with his buddies over lunch at a ski resort.  The gist:  the taste of energy bars isn’t good.   While the rest of the group surely moved on from the discussion, Richard became obsessed. Energy bars are great sources of energy, but they taste bad.  Cookies taste fantastic, but they aren’t good for you.  There had to be a way to combine the best parts of these two  . . . and in a form you could eat on a ski lift!

He found a family recipe for a date and coconut cookie, and began modifying.  His first taste-testers were friends, but he quickly found them too agreeable.  So he enlisted children to taste test for him.  If the kids didn’t like something, he could see it on their faces immediately. 300 batches and 18 months laster, Richard had his super cookie.

His first sale was in November, 2009.  Children’s Hospital in Denver and the University of Colorado Hospital sold the cookie; their endorsements helped sales grow elsewhere.

These days, Richard and 4 part time employees produce 2,000 Hulee Super Cookies each week.  They are distributed to retailers thoughout Colorado.

Watch for a new Hulee product coming out this winter: the Wheat-Free Vegan Hulee Cookie.  In addition, the original Hulee Cookie will have new packaging.  Both the original and the wheat free cookie will be sold in single-serving packages.

Simple and Local Ingredients

It has always been important to Richard to keep the ingredients simple– every ingredient is pronounce-able and recognizable.  Ingredients from ‘as local as possible’  is another goal.  The original Hulee has 4 organic fruits, 3 natural nuts, organic rolled oats and rye, organic flaxseed and organic Colorado Honey.  His farthest-away ingredient grows in California.

Ironically, the bees that produce his honey in Fort Collins, CO are flown out to California in the winter to help pollinate almond trees. The almonds in the Hulee Super Cookie are from the same zip code where the bees do their winter work.  It’s likely these same bees help produce 2 Hulee ingredients.  The energy the bees put into the cookies is most certainly transferred to Hulee eaters!
