Banana Granola Muffins

Sure, you can just open the bag and eat your granola, but why not take advantage of the flavors for baked goods? If you like the flavor of the granola, why not use it to flavor your muffins?

These muffins don’t have a lot of sugar, but the bananas and the granola itself add extra sweetness. Even so, they’re not overly sweet. Perfect for breakfast or brunch.

  • 2 cups (9 ounces) all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Bulumu Orange Ginger Cranberry wheat free granola (plus more for topping)
  • 1/2 cup buttermilk
  • 1/2 cup milk
  • 1 egg
  • 2 ripe bananas, mashed
  • 1/4 cup sugar
  • 1/4 cup vegetable oil

Preheat the oven to 375 degrees and spray 12 muffin cups with baking spray.

wheat free granolaCombine the flour, baking powder, baking soda, salt, and granola in a medium bowl.

In a separate bowl, combine the buttermilk, milk, egg, bananas, sugar, and vegetable oil. Whisk to combine.

Add the wet ingredients to the dry and fold to combine – do not overmix.

Scoop the batter into the prepared muffin tins. Top with additional granola. Bake at 375 degrees until browned, about 20 minutes.

Remove the muffins from the tins and let them cool on a rack.

Whether you call that an understatement or a cliché, Bulumu Granola, one of city’s newest natural cereal companies, calls it a challenge.

Jasmine and Brandon are both passionate athletes and adventurers. Jasmine started competing as a professional triathlete when she was 18 and was nominated for the Colorado Sportswoman of the Year award twice. Brandon played lacrosse in college, and he’s also a back-country skier and a marathon and triathlon competitor.

When Jasmine was training at the Olympic Training Center in Colorado Springs, she began experimenting with granola recipes and sharing with teammates. For a while, it was just a casual hobby, although her recipes were always popular with the other athletes. In 2009, Jasmine moved to Boulder and met Brandon at a bike shop where they both worked.

Jasmine eventually introduced her granola business idea to Brandon, and in 2010 they decided to go for it. Bulumu Granola represents their shared passions for the outdoors, adventure, healthy living, and food.

One of Brandon and Jasmine’s biggest challenges was refining their base recipe. The original recipe was perfect for Jasmine’s athlete friends, but had too much sugar and calories for the average consumer. Their final recipe is not only nutritionally competitive, but has a delicious, recognizable flavor.

They use ingredients like whole grain oats, organic light agave nectar, raw almonds, raw walnuts, and raw wildflower honey and leave out high-fructose corn syrup, hydrogenated oils, canola oil, and genetically modified food products.

The name Bulumu stands for “Buckle up, love you, miss you,” a good-bye phrase Jasmine and her mom started using when she began her athletic career. For Brandon and Jasmine, the name now defines “the pursuit of passions and the encouragement of living life as an adventure.”
